I've been looking for new easy recipes to cook and had stumbled upon the Buddha or Rainbow Bowls. So I went back here for some inspiration, opened the fridge and in 15 minutes I had a delicious lunch on the table.
What I used for today's Rainbow Bowl: kale, baby boo choy, asparagus, sweet potato, carrot, cucumber, red cabbage and pine nuts. Out of the ingredients above I ended up leaving out the beans and chickpeas and the beetroot (for no particular reason).
